I would be willing to bet either that Sagat is undetectable or that he is now on PrEP.

I remember when he first came out, talking about how bareback porn was something he would never do. Back in the day, in 2005, that made sense: Without any knowledge of undetectability never mind PrEP, someone negative filming bareback porn could reasonably expect to seroconvert in short time. If he's undetectable, he does not have to fear infection, similarly if he is now on PrEP. People can change their minds and opinions when facts change around them.

(I am certainly not François Sagat, but I know that until just a couple of years the idea of having bareback sex outside of certain very restrictive categories would have been impossible.
