Hi.  I used the Hotel Pennsylvania for that sort of thing a couple of times last winter.  It's a little run down, but for the location you can often get a really cheap rate.  Also it's huge, so it's easy to remain anonymous.  There's an employee stationed by the elevators with a sign that says you have to show your room key, but there's so much traffic they never stop anyone unless it's really late.  I only ever had 2 guys get stopped and it was like 3-4am for both of them.  (They were both gentlemen of color, which may or may not have been a factor.)  Even then, they just call up to your room and ask if you are expecting someone.
